Once you're able to get past the strange aroma of Mung Beans, they are sure to become your new best friend! The benefits are endless, ranging from high fibre content to zero cholesterol, these beans are low in saturated fat and sodium and high in Vitamin C, iron and folic acid.Soak them overnight so they're slightly sprouted. Dice carrots, cucumbers, cherry tomatoes, flat-leaved parsley, cilantro, red onions and if you want an extra kick of protein, mix in some Garbanzo beans. In a huge bowl, stir in some freshly squeezed lemon juice, spicy hot green chili peppers, a pinch of salt, black pepper and viola!
